chocolate and coconut paleo popsicles

I’m going to admit it. I can afford to be a little bit healthier. Okay, well…Β a lot healthier. Sugar seems to be my culprit. No matter how many times I think I’m making healthy choices, sugar is still very, very present in my selections which causes me to never reach my goals and slowly start packing on the pounds.
I’ve never been into fad diets and am looking to still enjoy what I love, just a healthier version of it.

Enter popsicles.

Because hello! Who doesn’t love a good popsicle on a damn hot day (thanks Texas summers!). These popsicles are all natural made with natural sugars. None of the white sugar/white death stuff. They may not be able to cure this Texas heat but they can certainly break it for a few.

Paleo Chocolate Popsicles:

Ingredients

Popsicles

  • 1 cup cashews
  • 1 tbsp maple syrup
  • 1 1/2 cup water
  • 2 tbsp coconut oil, melted
  • 6 tbsp cacao powder
  • 1 tsp vanilla extract

Drizzle

  • 1/3 cup cacao powder
  • 1 tbsp coconut oil
  • 1 tbsp maple syrup

Instructions

  1. For popsicles:

    Soak cashews in an airtight container and place in the fridge for at least 4 hours or overnight.

    Drain cashews and put in a blender with maple syrup, water, coconut oil, cacao powder and vanilla extract.

    Blend until smooth and place in popsicle molds. Freeze.

  2. For drizzle:

    Mix all ingredients in a bowl. Place melted chocolate in a pastry bag with a small tip. Drizzle over frozen popsicles.

Paleo Coconut Popsicles

Ingredients

  • 1 can organic coconut milk
  • 1 1/2 tbsp maple syrup
  • 1 tbsp vanilla extract
  • 1 tbsp shredded coconut (for garnish)

Instructions

  1. Combine all ingredients in a large bowl or blender in a blender to thicken.

    Pour into popsicle molds. Freeze.
